It efflorescents itself in air. Its water solution is slightly alkaline . It PH value is 9 . It melts itself at 240 degree C .

USES : Di sodium phosphate have a wide variety of use in conventional food processing. It is used as a PH stabilizer for food . It is added for instant cooking, mainly in pasta products .Its salts are also applied to develop the thickened texture of food stuffs.It is also used as antimicrobials .It finds its major application as stabilizers, emulsifiers,tanning agent ,additive to soften water in boiler and as a fire preventive agent for fabrics, paper and timber .
